Ingredients :

  • 2 lemons
  • 2 orange
  • 2 fennel bulbs
  • 200g rocket
  • 75g walnuts chopped
  • 75 g pecan nuts chopped
  • 75g black olives cut in half
  • VINAGRETTE :
  • 1 tablespoonful olive oil
  • 2 tablespoonfuls white wine vinegar
  • 1 teaspoon mustard

Peel the oranges and lemon removing the white skin under the peel, cut the fruit into fine round slices.

Chop the fennel finely; separate the rocket into leaves.

Mix the ingredients for the vinaigrette together and stir briskly.

In a salad bowl, mix the salad ingredients together then add the vinaigrette.
